Europe discovered the Sichuan pepper tree in the 13th century when Marco Polo brought it back to Venice.
Fashionable for a time in the Italian nobility, it disappeared from the kitchens until the 19th century to return to the kitchens of great chefs towards the end of the 20th century.

SICHUAN PEPPER
It then became widely available, it is most often used to season red meat, especially beef or lamb. Its culture has also been known in Japan for several hundred years. This spice is obtained after drying and grinding the husk surrounding the fruits of the Sichuan pepper tree, a robust and thorny shrub, known as "clavalier" in France.
